Garlic Spinach
Ingredients
2 Ib fresh spinach
2 tbsp peanut oil
2 garlic cloves crushed
1 tsp chopped lemon grass
Pinch of salt
1 tsp brown sugar
Method
Remove stems from spinach and rinse thoroughly. Heat oil in pre
heated wok until it is almost smoking.
Add garlic and lemon grass and stir-fry for 30 seconds. Add spinach
and salt to wok and stir-fry for 2-3 minutes. Stir in dark soy
sauce and brown sugar and cook for a further 2-3 minutes and
transfer to a warm serving dish and serve immediately.
