Aubergine Raitha

Ingredients

One medium aubergine
Two fresh green chillies
One carton low fat natural yoghurt
Salt and pepper to taste.

Method

Place the aubergine under the grill and grill all over until the skin is harden and the vegetable softens.
Place in a container filled with cold water and allow to cool.
Next grind the chillies.
Remove the skin from the aubergine and mix for 2-3 minutes and out the mixture into a bowl, add yoghurt and mix well.
Add salt and pepper to taste.
This can be used on its own or used as a dip with raw carrots, celery, cucumber etc.
