Indian restaurant is just what the doctors ordered

A NEW Indian restaurant will be just what the doctors ordered.

Padmini Sankar and her husband Dev plan to inject traditional cuisine from their home town of Tamil Nadu, southern India, into Ramsbottom.

Padmini, known as Mini, started her own home-business, Mini’s Kitchen, which has been so successful she decided to branch out.

With the support of Dev, an anesthetist with the Pennine Acute Trust, plus sons Sav and Hari and daughter-in-law Jayshee, the family have bought Carr Bank Lodge on Ramsbottom Lane and her dream of opening a restaurant is set to become a reality.

Mini, who works in the radiology department at the Royal Bolton Hospital, hopes the family-run business will bring traditional, regional dishes like Idlis, Dosas, Uttappam, Rassam, Sambhar and Vada of Southern India to Ramsbottom.

She said: ‘When people in the UK think of Indian cuisine, they tend to think of tandoori chicken, naan, curries and tikka masala.

‘We want to bring the lighter, spicier, healthier dishes of southern India, without artificial colouring to Ramsbottom.

‘The food is very healthy and there’s a huge vegetarian menu.

‘It’s nothing like what you see in most other Indian restaurants; they are mostly Pakistani or Bangladeshi.’

Mini added: ‘I want the restaurant to be very contemporary, and very subtle.’

The couple, who live in Bamford, chose the venue because of the up-and-coming town and the siting of the cottage within Ramsbottom.

Mini said: ‘We have advertised for a chef, but we haven’t heard anything yet. We might have to recruit from London or overseas.

‘I work part-time as a doctor Wednesday, Thursday and Friday and I will be helping at the restaurant the rest of the time with my family.

‘The restaurant will be open in the evenings throughout the week, and for lunches on Saturday and Sunday.’

Work on the former gatehouse, dating back to 1857, is going well and Mini hopes the restaurant will be open by 14 April – Tamil New Year.
